8 Whiting Fillets
1 cup mayo
1/4 cup Creole mustard
1.5 Tbs minced garlic
1 Tbs ketchup
1 Tbs horseradish
1 Tbs Hot Sauce
1 Tbs pickle juice
2 Tbs Cajun seasoning
1 Tbs Paprika
1/2 Tbs Tarragon
1/2 Tbs Lemon juice
1 cup seasoned cornmeal
1 French baguette split into two pieces
1 cup shredded iceberg lettuce
1 sliced tomato
Directions
Combine mayo, mustard, garlic, ketchup, horseradish, hot sauce, pickle juice, Cajun seasoning, paprika, tarragon, and lemon juice in a mixing bowl and whisk until incorporated. Adjust seasoning as desired. Slice baguette for your sandwich and spread mixture generously onto both sides.
Batter Whiting fillets with seasoned cornmeal.
Heat oil to 350 degrees.
Fry fish for approx 2-3 minutes - until golden brown.
Assemble sandwich on prepared baguette with fish, lettuce, and tomato. Enjoy!
