Serves 4
¼ pound Carmel Canyon smoked black cod
12 ounces soba noodles, cooked per package instructions then rinsed under cold water
2 medium-boiled eggs (about 7 minutes in boiling water, so yolk is firm but not hard)
4 cups of fresh vegetables - broccoli rabe, Tokyo turnips and their leaves, summer or winter squash, or whatever vegetables you like
1 clove garlic, minced
1 teaspoon fresh ginger, minced
Sesame oil
1 quart broth, or more if desired (Can be seafood broth, miso, or a combination. If you're a Real Good Fish member, you can freeze the shells of ridgeback prawns and boil them for 15 minutes with herbs, salt, pepper, and chili to make a delicious broth.)
4 tablespoons green onion, sliced very thinly on the diagonal
Gomasio for garnish
Chili paste or Sriracha for additional heat, if desired
Directions:
Sauté vegetables with garlic and ginger in sesame oil, then set aside.
Peel and halve boiled eggs.
Heat the broth.
In four bowls ladle broth, add cooked soba noodles, vegetables, pieces of smoked black cod, and half an egg. Garnish with scallions and gomasio.
Serve with sesame oil, chili sauce, and soy sauce on the table so everyone can spice their own.
